A low chemical, easy to make mayonnaise
Ingredients
- 1/4 cup Cornflour (wheaten)
- 1 teaspoon Citric Acid (or more to taste)
- 1 teaspoon Salt
- 1/4 cup Sugar (or more to taste)
- 1 1/4 cup Water
- 2 Eggs
- 175ml Sunflower Oil
Directions
1. | Combine the cornflour, citric acid, salt, sugar and water in a small saucepan and cook over medium heat. |
2. | When thickened (it looks like glue), pour into a blender and while whizzing add the eggs and drizzle in the oil. |
3. | Keeps in an airtight container for about 2 weeks. |

- 1/2 cup light evaporated milk
- 1/2 cup sunflower oil
- 2 teaspoons rice malt syrup
- 1 - 2 tablespoon lemon juice substitute (Refer to basics page)

If salicylates aren't a problem use lemon juice and honey instead of the lemon juice substitute and rice malt syrup.

Low salicylate, salad dressing.
Ingredients
- 1 teaspoon Citric Acid
- 2 teaspoons Hot water
- 1/2 cup Sunflower oil
- 1/2 cup Pear juice (Refer to Basics Page)
- Ground sea salt
Directions
1. | Dissolve the citric acid in the hot water. |
2. | Combine the oil, juice, citric acid and salt in a jar. Shake to mix well. |
3. | Store in the fridge for up to 3 days. |

Ingredients
- 2 teaspoons sunflower oil
- 1 tablespoon malt vinegar
- 1/2 tablespoon maple syrup
- pinch salt
Directions
1. | Combine all the ingredients in a jar or container with a lid and shake well. |

This recipe makes enough dressing for a 2 - 3 person salad.
