Easy Weeknight Meals – Baked Salmon with Fried Lentils and Mash
When we started the elimination diet with Oscar, one of the first things we discovered was that he loved lentils. There is a recipe in the Friendly Food book called “Crispy Fish and Lentils” that we tried. Oscar didn’t like the fish, but couldn’t get enough of the lentils. Since then, fried lentils have become a mid-week staple as a side for many dishes. After completing the elimination diet and all the challenges, we were able to add Amines back into out diet, which included salmon. We tried the salmon expecting to get the same response as the white fish, but surprisingly Oscar loves it. He can’t get enough when we have it.Since salmon and lentils are two of Oscar’s favourite foods, this is a regular mid-week meal and very easy to make.
