The first of these recipes is based on the traditional rum ball recipe (without the rum) and dipped in chocolate. The second is based on a Nigellarecipe. Oscar and I were watching her Christmas episode a couple of nights before Christmas and when Oscar commented that the fudge would be “yummy in my tummy” I knew I had to make it.

Quick, easy, festive chocolate balls, with fresh coconut and chocolate.
Ingredients
- 250g plain biscuits (e.g. Arnott’s Milk Arrowroot, Teddy Bear or Marie biscuits)
- 400ml skim condensed milk
- 1/2 teaspoon vanilla essence
- 3 tablespoons cocoa powder
- 200g cooking chocolate (milk, dark or white)
- 1/2 cup grated fresh coconut (Refer to Basics page)
- 1 packet Nestle Smarties
Directions
1. | Crush the biscuits and combine with the condensed milk and vanilla until it is all moist. |
2. | Roll the mixture into small balls (about 1 heaped teaspoon per ball) and place onto a lined tray. Place in the fridge for at least 30 minutes. |
3. | Meanwhile, melt the chocolate and place the coconut onto a smalll plate and the Smarties on another. |
4. | Coat the balls in the melted chocolate using 2 teaspoons (or your fingers) then dip one end into the coconut or top with a Smartie. |
5. | Place the balls back onto the tray and return to the fridge to set. |
6. | Store in an airtight container in the fridge or freezer. |

Chocolate Cashew Fudge

Delicious chocolate cashew fudge.
Ingredients
- 350g dark chocolate (at least 70% cocoa solids, chopped)
- 400g skim condensed milk
- 30g unsalted butter
- 150g unsalted cashews
- pinch salt
Directions
1. | Place the chopped chocolate, condensed milk, butter and salt into a heavy-based pan over a low heat and stir until melted and well combined. |
2. | Place the nuts into a freezer bag and hit them with a rolling pin, until broken up into some large and some small pieces. |
3. | Add the nuts to the melted chocolate mixture and stir well. |
4. | Pour the mixture into a 30 x 20cm tray lined with foil, smoothing the top. |
5. | Let the fudge cool, then refrigerate until set. |
6. | Cut into 64 small pieces, cutting 7 x 7 lines in the tin to give 64 pieces best achieves this. |
7. | Once cut, the fudge can be kept in the freezer, and can be eaten without thawing. |

Very High Amines, Low Salicylates, Low Glutamates
Hi Michele, the smarties are a special treat. There are no additives, preservatives or artificial colours in the smarties, but the natural food colours are high in salicylates.
thankyou for your wonderful blog and sharing this info. Have done FAILSAFE before with good results and looking to start again and its kind of daunting getting my head around it all again
can I ask about the Smarties, I gather this is special occassion/rare treat food is that right as I thought hte Smarties would be out due to colors/additives that would normally be avoides
