When we started the elimination diet with Oscar, one of the first things we discovered was that he loved lentils. There is a recipe in the Friendly Food book called “Crispy Fish and Lentils” that we tried. Oscar didn’t like the fish, but couldn’t get enough of the lentils. Since then, fried lentils have become a mid-week staple as a side for many dishes. After completing the elimination diet and all the challenges, we were able to add Amines back into out diet, which included salmon. We tried the salmon expecting to get the same response as the white fish, but surprisingly Oscar loves it. He can’t get enough when we have it.Since salmon and lentils are two of Oscar’s favourite foods, this is a regular mid-week meal and very easy to make. We use plain frozen salmon fillets and bake them as per the instructions on the pack and serve with the lentils, mash and other vegies such as beans or peas and carrots.

An easy, healthy side dish. Lentils fried with spring onions and garlic.Low in salicylates.
Ingredients
- 1 tablespoon Sunflower oil
- 1 can Lentils (400g, drained and rinsed)
- 4 Spring onions (finely sliced)
- 2 teaspoons Minced garlic
Directions
1. | Heat the oil in frying pan. Cook the spring onions and garlic for about 2 minutes, or until soft. |
2. | Add the lentils and mix through, cook until the lentils are heated through. |
3. | Serve immediately. |

Quick, easy side dish. Mashed potato and swede, low in salicylates.
Ingredients
- 4 Medium potatoes (peeled and chopped)
- 1 Medium swede (peeled and chopped)
- 2 heaped tablespoons light smooth ricotta
- Salt
Directions
1. | Cook the potato and sweded (steam, boil or microwave) |
2. | Mash the cooked vegetables with the ricotta until smooth. |
3. | Season with salt and serve immediately. |

Easy oven-baked salmon.
Ingredients
- 4 salmon fillets
- Minced garlic
Directions
1. | Preheat oven to 200°C. |
2. | Place each piece of salmon, skin side down, on a piece of foil. Rub some garlic over the top of the fillet and wrap in the foil. Place the fillets into a baking tray. |
3. | Place in the oven and bake 20 - 30 minutes, depending on the thickness of the fillet, until cooked through. |
4. | Serve with fried lentils and potato and swede mash. |
