I made a trial of my Chocolate Cashew Butter cheesecake for Christmas last week; luckily I had a picnic to take it to, as it is far too rich for us to even consider polishing of ourselves! Oscar even told me it was too sweet. Even with low fat sour cream and cream cheese, it is still incredibly rich and indulgent. It’s based on a Nigella Lawson recipe, and she does say:
“I feel a bit apologetic for the overindulgent vulgarity that is this cheesecake here. But, really, why should I be sorry? You won’t be once you’ve eaten it; though perhaps I should warn that it’s not for the faint-hearted. Unashamed indulgence, wallowingly so, is what this recipe is all about.”
I couldn’t agree more, so here it is!

Ingredients
- Extra butter for greasing
For the base
- 50g Roasted and salted cashews
- 100g Dark chocolate chips
- 200g Arnott's shredded wheatmeal biscuits
- 50g Unsalted Butter
For the filling
- 500g Light cream cheese
- 3 Eggs
- 3 Egg yolks
- 200g Caster sugar
- 125ml Light sour cream
- 250g Cashew paste/butter (Melrose or Ceres)
For the topping
- 250ml Light sour cream
- 100g Milk chocolate chips
- 30g Soft brown sugar

Recipe notes:
- All ingredients should be at room temperature before starting.
- The cheese cake can be made up to 2 days in advanced and stored in the fridge, covered in glad wrap. Keep the cheesecake in the tin, to preserve its shape.
- Can be stored in the fridge for up to 4 days.
- To freeze, keep the cheesecake in its tin and wrap in 2 layers of glad wrap, then a layer of tin foil. Defrost overnight in the fridge. Freeze for up to a month.
Yum! Looks absolutely delicious. I might have to try and recreate the recipe over Christmas!
Wow..what a recipes…I am gonna try it next holiday…..is it low fat diet.I am pretty much concerned about my health.
It’s defintely not low fat, but it is lower fat than the original recipe from Nigella.
