It’s been an interesting week food wise. On Sunday I went to a Thermomix party. I met R, the hostess, through Freecycle where I had used my Oscar’s Mum email. R has 2 kids on the RPAH elimination diet and her husband had recently found my website and R had found the book Oscar’s Lunch box – so I had to be one of those Oscar’s Mums! I really enjoyed the demo and was surprised that it really could do all those things – very impressive! I also got some good recipe ideas from R and her friends.
The other exciting development is at Oscar’s day care centre where they are trialling a new caterer, who deals with allergies and intolerances. I’ve given them a list of what Oscar can and can’t have from their ingredients and they are making special meals for him. Two days in and so far so good, he thinks he’s eating home meals not day care ones. I’ll report back in a few more weeks on how its going.
I also want to give a bit of a plug to Zoku and Hale Imports who replaced the rim of my Zoku ice cream maker for no charge maker after I dropped the whole thing lifting it out of the freezer (bottom of the fridge one) and smashed the rim. The rest of it still worked fine, so it’s pretty robust!
Summer is BBQ time and that usually means that the men are outside cooking meat, while the women make salads. For some this is the only time their husbands or partners cook. I’m lucky my Hubby shares the cooking, but the BBQ is his domain not mine. The BBQ chicken recipe is his, and during the warmer weather it replaces our weekly roast chicken. While hubby does the BBQ, I do the salads. This is the Potato, Egg and Bacon salad I made for Christmas lunch, modified from this one from momofukufor2.
Potato Egg and Bacon Salad

Ingredients
- 1kg Potatoes (peeled and quartered)
- 3 Eggs
- 6 Slices Preservative-free bacon
- 3 stalks Celery (finely sliced)
- 3 Spring onions (finely sliced)
- 5 tablespoons Mayonnaise (refer to basics page for recipes)
- Salt
Directions
1. | Hard boil the eggs, peel, dice and put aside. |
2. | Dice the bacon and cook over medium heat in a frying pan until it becomes crispy. Transfer to a plate lined with paper towels to drain the fat. |
3. | While the bacon is cooking boil the potatoes in a large pot of salted water until just tender. Drain and transfer to a large salad bowl. |
4. | While the potatoes are still warm add the spring onions, celery, egg and bacon. Add the mayonnaise and mix well. Add more mayonnaise if necessary and season with salt. |
5. | Place in the fridge to chill before serving. |

Note
Low Chemical / Failsafe if the skin (amines) is removed before eating.
The fat will drain from the chicken into the cooker, so watch out for flames. The chicken cooks much faster than in the oven.
