I’ve been making my version of Frilly Pants’ Moderate Chemical Muesli Bar for ages now. I have always made it in a silicon mini loaf tray and the muesli bars have been firm and crunchy, and last for months in an airtight container; which was great for keeping at childcare. Having moved out of our house into a small flat while we rebuild I don’t have a lot of my “equipment” so made these as per the original recipe in a tray. They turned out completely different – softer and moist (so didn’t keep as long) but just as yummy. So now I have one recipe and two different outcomes – muesli bars and muesli slice.

Carrot and Zucchini Muesli Slice

Ingredients
- 2 cups cereal (Refer to note)
- 2 tablespoons quinoa flakes
- 2 tablespoons puffed amaranth
- 1 Small carrot (finely grated)
- 1 Small zucchini (peeled, finely grated and excess liquid squeezed out)
- 1 tablespoon rice bran oil
- 200g condensed milk (Refer to note)
Optional
- 2 tablespoons fresh grated coconut (Refer to note)
- 1/4 cup Nestle White Melts or Choc Chips (Refer to note)

Moderate Salicylates, Low Glutamates, Low/Moderate/Very High Amines
For the 2 cups of cereal, start with rolled oats as your base and make up the two cups with any other allowed cereals. We use puffed rice, millet rings, processed bran and/or Special K.
Variations:
- Fresh coconut is moderate chemical and contains both amines and salicylates. If these can be tolerated the fresh grated coconut can be included.
- Nestle White Melts are a milk based confectionery and are not derived from chocolate, so they are low chemical. If amines are tolerated you can use any white, milk or dark chocolate that is tolerated.
This recipe can also be used to make muesli bars that last well in an airtight container for up to 2 months (great to have on hand at school or child care).
200g of condensed milk is half a can, the other half can be frozen to make another batch later.

- I use tartaric acid as a preservative to keep the muesli bars for longer so that I can send them to Oscar's day care centre. You can use citric acid instead, or leave this out if they are going to be eaten quickly.
