Australia Day Green and Gold Bean Salad and Pear Slushies (kids and adult’s version)

Last week we had a fridge full of fresh beans (from our garden and my parents garden) so I decided to make my Green Bean Salad.  This is one of my favourite salads and favourite ways to eat beans.  It is also very easy and quick to make.  We had both butter beans and green beans on hand so that’s what I used.  Once it was made I realised it was quite patriotic and worthy of reposting for Australia Day (it is also one of my oldest posts and has been hiding away in my archives for a while).  I finally remembered to take a photo of it as well!

The pear slushies are one of Oscar’s favourites in the hot weather.  We always have ice cubes in the freezer during summer (and pears in syrup by the boxful !) so these are always only 5 minutes away.  The adults only version is great on a hot summer’s day when you get a few minutes to yourself to sit and chill. 🙂

 

Green Bean Salad with Egg Topping

A delicious, easy and healthy bean salad, use green and yellow beans for a colour variation.

Ingredients

  • 675g green beans (topped and tailed)
  • 2 tablespoons butter (or Nutelex)
  • 2 tablespoons sunflower oil
  • 1 cup home made bread crumbs (refer to basics page, or use rice crumbs)
  • 4 tablespoons parsley (chopped)
  • 1 egg (hard-boiled and shelled)

Directions

1. Cook the beans in salted boiling water for 6 minutes, drain well, toss in the oil and place in a shallow serving dish to cool.
2. Heat the butter in a large frying pan, add the bread crumbs and fry until golden. Remove the frying pan from heat, add the parsley, then grate in the egg.
3.
Spoon the bread crumb topping over the beans and serve.

4. If preparing the salad in advance, store it in the fridge, then allow it to come to room temperature before serving.

Note

Low Chemical / Failsafe

Variations:

1. Use rice crumbs or Orgran Multigrain crumbs for a gluten-free version,

2. Use Nutelex for a dairy-free version,

3.  Use yellow beans, such as butter beans for a colour variation,

4.  If eggs are a problem the topping can be made without them, or make two versions (one with, one without egg) and serve them both as a side dish, letting people spoon the topping on after serving.

Pear Slushy

Serves 1
Prep time 5 minutes

Quick, easy pear slushies.

Ingredients

  • 4 pear halves in syrup
  • 1/2 cup syrup from pears in syrup
  • ice cubes

Directions

1. Place the pears, syrup and a handful of ice cubes into a food processor and whiz until the ice is crushed.
2. Pour into a chilled glass and serve.

Note

Low Chemical / Failsafe

If you don't have a food processor that can crush the ice, crush it in a plastic bag with a rolling pin first before adding to the food processor or blender.

 

Pear Slushy (Adults Only Version)

Serves 1
Prep time 5 minutes

Easy, quick adults only pear slushies with vodka.

Ingredients

  • 4 pear halves in syrup
  • 1/2 cup syrup from pears in syrup
  • Ice cubes
  • 1 shot vodka

Directions

1. Place the pears, syrup and a handful of ice cubes into a food processor and whiz until the ice is crushed.
2. Add the vodka and give a final short pulse on the food processor.
3. Pour into a chilled glass and serve.
